I’m not really sure what is or isn’t possible with packet sniffing, but Souls fans are pretty passionate.
emulation and somehow reverse engineering a server with just the game are all beyond me. somehow it was pulled off for demon souls but I have no idea if that was easier or not.
Just tell them it’s hard.
