I had some friends over and decided on stuffed squash. My version is a tweak on this recipe. I didn’t want to go to the store so I used what I had on hand.

2 x Butternut Squash - 5 lb = $5.00

Hot Breakfast Sausage - 1 lb = $3.59

White Rice - 1 cup = $.30

Onion - 1 whole = $.50

Garlic - 4 cloves = $.30

Canned Mushrooms - 1 can = $1.29

Frozen Spinach - 1 cup = $.30

Shredded Cheese - 1 cup = $1.00

Parmesan Cheese - 2 tbsp

Olive Oil - 2 tbsp

Ground Sage - 1 tbsp

Salt and Pepper - to taste

Total = $12.28

Cost per person = $3.07

    Looks great!

    I don’t know why I don’t bake squash more often. It’s easy to make, hearty, and nutritious. Barely needs more than a little seasoning to be delicious.

    Spaghetti squash is fun too, as a sort of noodle replacement…

      Yup, squash is an underrated fruit IMO. It’s pretty delicious in anything or by itself. So easy to make you can just plop some butter on it and microwave it and it’s delicious.
