Yes! It can and shouldm be done. Unfortunately on per-Wi-Fi basis, so you need to set it up for every single wifi separately - but still worth to do on your home/work wifi. Settings -> Wifi -> “i” icon on the right of the wifi name -> scroll down to “Configure DNS” -> Manual -> “add server” -> put 86.54.11.13 and 86.54.11.213 for DNS4EU with ads and malware filtering or any other IPs you want to use (I personally use these two and they work amazing)
Thanks. Also if you know people who migrated from developing countries then ask them to use European tech. I have noticed that akk my Indian and filipino colleagues heavily use american Tech. Their brain only tells them to use google, Facebook, instagram

Yes crazy it is but there’s a momentum to switch away from US dependance.
There are smaller infrastructure providers in Europe, but nothing that even comes close to the scale of Amazon or Google.
Biggest effort I see are from French and Swiss providers. Check out Chatons for a list of Europe (mostly France and Belgium) based privacy-respecting cloud service providers.
