    Same here, except at the 2nd/mid stage which is apparently reversible through diet/exercise management.

    The advice given by colleagues and family were to cut down on carbs (white bread, rice etc.), eating more high fibre foods (green veggies, wholemeal bread etc.). Avoiding more processed/fatty meats like bacon, sausages, beef and pork. Fish and chicken still seem ok.

    They also advised at least some daily cardio and core strengthening exercises.

    I don’t know if this advice is new for you.

    The common factors for fatty liver disease are either

    • alcohol (alcoholic fatty liver) or
    • sugars, especially fructose (non-alcoholic fatty liver)

    So avoidance of those things, depending on your variant. Check the ingredients on the things you buy. Things like “high fructose corn sirup” should be avoided. Get an overview of how much sugar is in the stuff you buy.

    I guess you already have a new diet to manage, going vegan will only complicate that. Don’t get me wrong, i’d support it otherwise.

    Good news: caught it early!

    Best tips going forward: lifestyle changes. Manage obesity, control blood sugar, control hypertension; keep diet low in fats and high in fiber, low glycemic index foods, and protein. Plant based protein (🫘🫘🫘) is gold standard imo. Exercise 5-6 times a week.

    Major tip: keep up with your regular PCP visits to monitor progress! You’ll want to take your medications as prescribed; none of that “I only take the blood pressure pill when I feel I need it” nonsense!

    Take some OTC vitamin E supplements, avoid alcohol, and make sure you’re up to date on your vaccinations.

    I believe in fasting, I don’t know how well it can heal a fatty liver but each day of fasting (I cheat with black coffee) will spare your organs, letting them rest for that day. My health significantly improved when I started taking one day a week fasting. I am also vegan.

        Start with easy staples: learn oat milk, crispy tofu, mushrooms, bean patties, and a few sauces. Vegan cooking gets much easier once you know how to build texture and flavour. Focus on beans, tofu, grains, vegetables, fats, and sauces, also take B12 supplements until you learn the ropes :) I would go for:

        • Tofu stir fry with rice or noodles
        • Black bean burgers or patties
        • Chilli with beans, lentils, tomatoes, corn, and spices
        • Pasta with mushrooms, garlic, olive oil, tomato sauce, or cashew cream
        • Curry with chickpeas, potatoes, coconut milk, spinach, and rice
        • Wraps with hummus, roasted vegetables, tofu, or bean patties
        • Aloo gobi

        You can make your own wrap bread with very little effort and it tastes better! For oat milk you do:

        • 1 part oats
        • 4 parts cold water
        • Pinch of salt
        • (Optional) 1 tsp syrup or sugar
        • (Optional) 1 tsp neutral oil for a creamier texture

        Blend for 25 seconds. Strain through a fine sieve, nut milk bag, or clean cloth. Do not squeeze aggressively; that makes it slimy. You can use the leftovers as a sour dough starter or just for baking.

        Tofu is pretty bland by itself so it needs drying, seasoning, texture, and sauce. Use firm or extra-firm tofu.

        • Press it for 15–30 minutes, or pat it very dry.
        • Tear it into chunks rather than cutting perfect cubes. Torn edges crisp better.
        • Toss it around in a bowl with: garlic powder, onion powder, smoked paprika, salt, black pepper, cornstarch, (small amount of oil)
        • Pan-fry, air-fry, or bake to delight.
        • Add BBQ sauce at the end and stir-fry briefly.

        But this is of course just one example.

          Yeah, I was recommended leaning on tofu highly. What kind of grains exactly?

          I don’t know if I can have noodles. I can only have black rice, brown rice, and wild rice, not white rice.

          I can’t have pasta, I think.

          Never heard of aloo gobi.

          I think oat milk is okay as long as it’s not dairy milk.

          Should probably avoid salt as much as possible. Bo sugar.

          But yeah, despite being bland, tofu is great when you mix it with stuff.
