Why do you think phones aren’t listening? All of my anecdotal evidence leads me to believe that they absolutely will, depending on the apps installed.
I’ve been using LineageOS and GrapheneOS for maybe 8 years or so, and never have any social media / google apps installed, as well as ad / tracker blocking.
My friends, family, co-workers etc. are often served ads for very specific things immediately after we were talking about them. Toys, tools, kitchen equipment, even flights to countries or cities that were being discussed. All far too specific to be coincidence.
So while the phone itself may not be listening, apps can, depending on permissions etc.
Reading your list there, and they all sound like poor people problems. Have you thought about being rich instead?

No. This includes 4G and 5G devices. 3G devices will just stop working when the 3G network is shut down and don’t need to be blocked.
My phone is set to LTE only in my modem config, all of my calls are via VoLTE, my phone will still be blocked.

Funnily enough, in Australia we call the broiler a grill, and what you’re describing is exactly what I thought a grilled cheese was. One of my favourite snacks when I was a kid was this, but with corn kernels under the cheese as well. Of course, being Australian, cheese and Vegemite was also a winning combination!
Aussie here, I’ve always considered a cheese toasty to be a cheese sandwich that’s been toasted in a jaffle iron. A toasted cheese sandwich, however, would be more similar to a grilled cheese.

XZ1 Compact with LineageOS checking in! I never want to change from this phone, and I’m already scared about what’s gonna happen when they shut down the 4G networks in ten or fifteen years.
Our brains are quite adaptive though, maybe at first it would be like a pigeon playing QWOP, but after some time I think we’d figure it out.
